Gochujang Crispy Persian Rice Recipe (Tahdig)

How to make Tahdig, a traditional Persian rice recipe. This is a vegan and Korean version. This rice dish has everything you love about traditional fluffy saffron rice, with a golden crust and spicy gochujang butter.

What's Tahdig?

Tahdig, Persian for "bottom of the pot", refers to the rice bits that stick to it. This is a buttery, fluffy rice dish with golden crust. It's delicious, I can assure you.

My homemade gochujang compound sauce is a delicious way to spice up crispy Persian rice. This adds a mild, savoury and spicy kick to a already delicious crispy rice recipe.

This Recipe is Great

This week is Veggiekins Gochujang Week. I love taking old favourites and adding a vegan or Asian twist to them! Today, I am adding a spicy kick my Tahdig recipe!

Tahdig is typically cooked in butter to create a crispy shell. My vegan gochujang compound oil butter gives the crispy shell a slight kick. It's not too spicy, but it adds so much flavor to the dish.

Place your crispy rice on plates and top with fresh scallions and watermelon radish. Serve with any protein or as a side dish to any main. It's delicious with Korean Braised Tofu, Three Cup Chicken or any other protein.

Ingredient Notes

  • Basmati rice This is a common long-grain variety of rice that can be found in most grocery stores.
  • Use cold water To rinse and soak the rice. You must rinse the rice thoroughly and allow it to soak.
  • Crushed Safran + 3 Tbsp Hot Water: You will dissolve the saffron before you add it to the recipe.
  • Oil Choose the neutral cooking oil you prefer.
  • Gochujang compound Butter: You can make your own compound butter with this spicy butter recipe.

Garnish is optional

Step by step instructions

Basmati Rice:

  1. Rinse the rice until the water runs clear.
  2. Combine 3 cups of cold water with 1 tbsp salt in a large bowl. Combine well and then add the basmati rice. Let sit for an hour.

Bloom the Saffron

  1. To make saffron fine powder, use a mortar and pestle. Mix in 3 tablespoons of hot water. Stir. Let bloom.

Boil the rice

  1. Drain the rice completely after it has been soaked for at least an hour.
  2. Boil 8 cups of water in a large saucepan. Once the water has boiled, stir in the rice.
  3. Boil the rice for four minutes. After that, turn off heat and drain it again. It should now be very fluffy and slightly larger.

Get the Tahdig ready

  1. Half of the saffron water, 2 tablespoons oil and 2 tablespoons gochujang butter should be added to a nonstick skillet. Heat on low heat. Mix the mixture with a spatula until it starts to melt down. Then turn up the heat to medium.
  2. Once the rice is melted, heat it in a pan. Add enough rice to cover the pan. To gently press it down, lift the rice up a bit from the edges with a spatula or wooden spoon.
  3. Continue to add the rice to the pan. To create steam holes in rice, use a spatula. I made 7 holes. Make sure you don't penetrate the crust.
  4. Steam the pot for 10 minutes by covering it with a lid.
  5. Mix the remaining butter, saffron, and oil in a bowl. Then, drizzle the mixture over the top. Reduce the heat to low, cover the lid with a kitchen towels (to catch any moisture that might drip down) and cook for 30 minutes. Turn the pan about every 5-10 minutes for even cooking.
  6. Let cool on low heat for 5-10 minutes. Place a plate on the top of the pan. Gently flip the rice over and garnish it as you wish.

Expert Tips

  • There is sugar in gochujang, most storebought. It can brown faster and be more prone to burning. But not so much that it becomes unpalatable. According to Persian friends, this is the preferred choice

  • You can also use regular vegan butter in place of my homemade gochujang sauce.

Storage Tips

  • Tahdig tastes best when it is fresh. However, leftovers can be stored in an airtight container in your refrigerator. Then, heat them on the stove with some oil and crispy sides.
  • Crispy rice is not good for freezing so it's not recommended.

Because starch is released from the rice, it's crucial to soak the rice before you make Tahdig. This helps rice absorb moisture evenly so it doesn't become too mushy. It makes rice fluffy and delicious.

How can I make vegan gochujang compound butter?

Equipment

  • 1 nonstick pan approximately 10.5"

Ingredients

  • 2 cups basmati rice dry
  • 3 cups cold water
  • 1 tbsp salt
  • 8 cups water
  • 1/4 tsp crushed saffron
  • 3 tbsp hot water
  • 3 tbsp neutral oil
  • 3-4 tbsp gochujang butter or regular vegan butter

Instructions

Basmati Rice:

  • Combine 3 cups of cold water with 1 tbsp salt in a bowl. Combine well and then add the dry basmati rice. Let sit for an hour.

  • Cover the pot and steam for 10 min.

  • Let cool on low heat for about 5-10 minutes. Place a plate on the top of your pan. Flip the pan gently and garnish the rice according to your preference.
